Parolo Vini has a recent history.
Founded in 2023 by Stefano, with the support and expertise of his father Danilo, the
company stems from their shared passion for wine.
Despite its recent establishment, Parolo Vini is deeply rooted in family tradition. For three generations, the family has cultivated grapes from its own vineyards, located at Dossi Salati in Montagna in Valtellina, within the prestigious Valtellina Superiore Grumello appellation area.
The vineyard is nurtured with dedication, adhering to principles of sustainability and respect for nature. Herbicides are not used; instead, grass is mowed regularly, and pheromones are employed to naturally deter pests. The small yet efficient wine cellar, located in Montagna in Valtellina, is the result of modernizing the family’s historical winemaking facility.
Parolo Vini’s mission is to craft high-quality wines that authentically reflect the character of the region and showcase the full potential of the native Nebbiolo grape variety.
The Rosso di Valtellina Parolo 2023 is a young wine with a fresh character, crafted from Nebbiolo, locally known as Chiavennasca. The grapes are harvested manually, with only the finest bunches selected for vinification.
Both alcoholic and malolactic fermentation occur spontaneously, driven by the native yeasts present on the grape skins and in the cellar. The maceration process lasts ten days, after which the wine is racked, pressed, and left to mature in stainless steel barrels for 10 months at a controlled temperature.
To preserve the wine’s integrity, only a minimal amount of sulphites is added after racking. A medium-to-coarse porosity filtration is carried out during the final racking, ensuring impurities are removed before bottling.
This wine features a ruby-red color with garnet reflections, a delicate yet persistent aroma, and a dry, tannic flavor profile.
The Rosso di Valtellina pairs beautifully with traditional regional dishes such as pizzoccheri and game dishes, as well as risottos with mushrooms or radicchio, roast meats, and medium-aged cheeses.
For the best experience, serve at 18-20°C in a medium-sized tulip or balloon goblet.
The wine history of Valtellina is deeply rooted in antiquity, dating back to Roman and pre-Roman times.
Over the centuries, people have overcome the challenges posed by the impervious terrain by building terraces with dry stone walls to cultivate grapes. The vineyards are primarily situated on the south-facing slopes of the Rhaetian Alps, at elevations ranging from 300 to 700 meters above sea level. A consistent wind from Lake Como, known as the ‘Breva,’ ensures good ventilation, minimal rainfall, and significant temperature variations.
The undisputed star of Valtellina’s wine production is the Nebbiolo, cultivated in its local variant known as ‘Chiavennasca’. This grape variety has adapted to the rocky, shallow soils and accounts for 90% of the vineyards in Valtellina and is grown alongside other indigenous varieties.
The true strength of this wine lies in its resilience, thriving in a unique balance of arid soils, a distinctive microclimate, and the heroic efforts of the region’s viticulture. This synergy results in wines of exceptional finesse and remarkable longevity.
